Seafood at the Shangri-La
Executive chef Jean-Georges Vongerichten
VANCOUVER—On January 24, 2009, world-renowned executive chef Jean-Georges Vongerichten will debut Market by Jean-Georges, his first venture in the Canadian restaurant market with business-partner Phil Suarez. Located in the luxurious Shangri-La Hotel, the 85-seat restaurant features two private dining rooms, a casual bistro and a 60-seat seasonal outdoor terrace that will be open from spring to fall.
Vongerichten plans to focus on seafood in the Vancouver area for a menu that will abandon his use of meat stocks for vegetable and fruit-based ingredients and herbal vinaigrettes.
“Vancouver is a global dining destination,” says chef Vongerichten in a release. “I am eager and excited to have the opportunity to use the wealth of produce and products, especially the fish, available in the Vancouver area.”
Market is the initial collaboration between Shangri-La Hotels and Resorts, and chef Vongerichten and Suarez’s restaurant development company, Culinary Concepts, which launched in 2006.
