Delta Fredericton’s chef named Culinary Ambassador
FREDERICTON - Héctor Jiménez-Bravo, The Delta Fredericton Hotel’s executive chef, has been named the 2007 Culinary Ambassador of the Year by the Canadian Culinary Federation.
This is the second consecutive year that Jiménez-Bravo has been selected for this prestigious award.
"Chef Héctor was voted unanimously because of his extensive international involvement. It was a natural fit as we cannot forget his top award last year as "Best Hotel Chef" from the Eastern Europe Chef Toques Association. This award says a lot in recognition of his commitment to the Federation and his brigade at the hotel," says Delta Fredericton general manager Sara Holyoke.
Jiménez-Bravo brings the same bold approach to his trade in Fredericton. Using flavours and techniques from his native Colombia, influences from his time in St. Petersburg, Russia, and Asian-inspired presentations blended with classical French preparation methods, Hector is adding a new dimension to the local gastronomic landscape.
"I think food absorbs energy - the atmosphere in a kitchen needs to be positive. Even under pressure, you need to enjoy cooking," says Jiménez-Bravo. "Cooking to me is like making love - you wish to see the smile of the person you are trying to please!"
Jiménez-Bravo’s menu can be sampled at Bruno’s Restaurant at the Delta Fredericton on the edge of the St. John River. Jiménez-Bravo is dedicated to doing things differently and prides himself in using local ingredients presented in an atmosphere of unpretentious and gracious hospitality. Bruno’s adds a global culinary experience to the Delta Fredericton.
