NRA RECOGNIZES INNOVATIVE NEW EQUIPMENT
CHICAGO, IL— The Interactive Kitchen Innovations demonstration area at the National Restaurant Association Restaurant, Hotel-Motel Show at McCormick Place in Chicago, May 17–20, will feature a number of award-winning innovations suitable for hotel kitchens.

Carter-Hoffman makes the EnduraHeat Transport Cart that can keep contents heated up to two hours after being charged and unplugged, making it easier to transport hot food and eliminating the need for canned fuel.

Cambro Manufacturing Company has the Camtherm Hot/Cold Bulk Food Holding Cabinet that has no compressor, heating coil or humidifier, but keeps food hot or cold in transit.

Frymaster’s Protector Fryer uses a 30-pound frypot that uses 40 per cent less oil but has the production capacity of a 50-pound frypot.

Ecolab, Inc.’s Apex TSC Dishmachine is the first all-solid, low temperature dish machine to use a solid sanitizer registered with the Environmental Protection Agency and an attached controller to make it work with maximum efficiency. All this reduces the environmental impact of dishwashing in a foodservice operation.

These are four of 25 pieces of equipment that have received the 2008 Kitchen Innovations Award from the National Restaurant Association, with the focus this year being on energy and water conservation, improving productivity and adding to food safety.
